Stir in the chopped garnish of your choice (we used mint, but cilantro was also an option), the previously carmelised leeks, and the final chili, chopped finely.       <image:caption>Homemade chicken stock! It’s my favourite way to get all the good bits out of a whole chicken. Most recipes call for water, but I really like adding bits of flavour at every opportunity, and I like the extra nutrients that you get from homemade stocks. You could absolutely use water or any other type of broth or stock. Add just enough to cover the meat and toss in a bay leaf.</image:caption>

I find it easier to have them pre-measured before I toss them into the pot with the second leek. I like this type of juicer because it gives me the option to also scrape the flesh of the lemons into the juice. The only drawback is having to fish out the seeds.       <image:caption>Be sure to peel the sweet potato and the beets. Note: Beet juice stains really easily, hence I chose to use a plastic cutting board. Brussel sprouts are small enough that slicing them in half is enough to cook them through when grilled. Be sure to slice the sweet potato medallions fairly thinly so that they can cook through completely when grilled. The beets we found were really small, so I chose to just cut them in half. This made for very firm beets, but we both like them that way. If you want softer beets, slice them into medallions instead.</image:caption>

Since the stems and squash are so small, they only take about 20 minutes to cook. If you chop them into larger pieces, it may take longer.</image:caption>

The baby bok choy we had was pretty large, so I cut the stem end into eighths after I separated the leaves.
